Potato Pancakes

Making potato pancakes today was a double success. Westley had a great time making them, and ate them too. Usually he won't eat potatoes of any form. It's always more fun to try something you made yourself though!




Potato Cheese Pancakes Recipe
1 egg
1 tsp milk
1 large potato, grated
1/4 cup shredded cheese
1 tbsp flour
salt and pepper
butter or oil


Blend together egg and milk. Mix in potato, cheese, flour, salt and pepper. Drop by large spoonfuls onto a greased, heated frying pan. Fry until light brown on each side.
makes about 7 silver dollar sized potato pancakes.

In the same vein, we make vegetable pancakes. I find it is a tasty way to use up zucchini and carrots. Plus it fun to look at all the colors.
Here is the recipe:
1 large carrot
1 medium zucchini
1 medium yellow straightneck squash (yellow zucchini)
1/3 cup flour
1/3 cup grated parmesan cheese
1/2 teaspoon salt
1/8 teaspoon pepper
1 large egg
1/2 cup vegetable oil

1. Coarsely grate carrot, zucchini and yellow squash. Pat vegetables dry with a paper towel.
2. Mix vegetables with flour, egg, Parmesan cheese, salt and pepper
3. Heat oil over medium heat. Drop 1/4 cup vegetable mix in pan and press to flatten. Fry until brown.

Makes about eight pancakes.
