Lemon Curd

The boys have helped me juice lemons (which they did again today) and make muffins out of the lemon curd, but for the first time today they helped me make the actual lemon curd.
They helped add the ingredients, turn on the mixer, and Westley helped me keep track of how many minutes it had been in the microwave (as you put in in one minute at a time)



It turned out pretty good. Westley was very excited. He ate some for dinner mixed in with plain yogurt.

Will wasn't as excited, but he didn't make a good judge because he was already super grouchy




In his prayer tonight Westley  said "Dear God, bless me that I will get a lot more lemon curd because I love it" :)

Here's the recipe:

         1 cup white sugar
         3 eggs
         1 cup fresh lemon juice (around 8 lemons)
          zest of 3 lemons
         1/2 cup butter, melted
Makes about 2 ½ jars


Directions
Using an electric mixer, cream butter and sugar together. Then beat in eggs one at a time. Mix in, on low speed, the lemon juice and lemon zest. Trasnfer to a microwave-safe bowl. Cook in the microwave for one minute intervals, stirring after each minute until the mixture is thick - around 8-10 minutes. Remove from the microwave, and pour into small sterile jars.
Store for up to three weeks in the refrigerator.

where is the flax oil!? Your lemon curd is delicious and I love Will's grumpy face. I keep meaning to get a picture of Cole when he cries, because it really envelops his whole face and sometimes I have a hard time not laughing because he looks so cute.

yeah... I did nothing healthy to this recipe.
